Healthy Breakfast

Since I've given up meat I've done a good job. Im doing it slowly and adding healthy options to the slightly unhealthy meals I make.



The breakfast I made had eggs. It was scrambled eggs with toast. Instead of using white bread, I used whole wheat. Much better option for your health.


The Past

“Eggs with veggies and whole wheat toast”

Eating healthy has always been hard for me, even though my mother being a health nut usually made healthy foods for us growing up. Growing up with Dominican parents would seem easier to eat healthy, because our food is healthy. We love plantains, its our go to type of food, its what we live by. With plantains you can have it many ways for example, boiled, fried, fried and mashed. We had boiled plantains for breakfast usually which is called mangu. It's the healthier option. whenever we made food to eat especially traditional food that was usually fried, our mom would try to make it healthy. Low salt, small amounts of oil, etc. But I was always that kid that loved the salt, the saltier the better. which really had a toll on my weight.


The Recipe

To make this delicious breakfast meal the things you will need are:

2 eggs

A quarter of green bell peppers chopped (or however much you prefer)

Half an onion, chopped or sliced. I used white onion but you can use whichever one you'd like.

A clove of garlic, chopped or mashed.

Salt to taste

Pepper to taste

2 pieces of whole wheat bread or whole grain bread (your preference)

Directions:

The first thing I did was chop up some green bell peppers, and onions and garlic. Put them all in a bowl. Then take the eggs and crack them in there. Mix the eggs with the vegetables. I did 2 eggs because I wanted more vegetables than eggs, for the healthier option I would say use less eggs. Butter or oil the pan, I used a small amount of Canola oil but you're welcome to use coconut oil as it may be even healthier than the Canola oil. I poured the egg mixture in the pan and started cooking it, I added the salt and pepper to taste. It was low salt. I recommend using the least amount of salt as possible for a healthier option. I took the 2 slices of whole wheat bread and put them on the pan to toast them, you can also use a toaster. I buttered the pan with unsalted butter and let them toast for about 3 minutes on each side until the bread had a crunch to it. Once that was done, I served it on a plate and enjoyed!

“The healthier The better"

I noticed that cooking the eggs with the vegetables together made the eggs cook faster than the vegetables. They came out slightly raw, which wasn't bad at all. However, if you don't like raw vegetables I suggest cooking them first before adding the eggs. Cook them till they're almost soft and then add the eggs, since the eggs cook fast the vegetables won't burn. Cook it on medium heat, I cooked them on medium high heat and the eggs cooked too fast. (Probably why the vegetables didn't cook all the way through) Another thought, you don't have to use the vegetables I used in this recipe, you can definitely make it your own, Use carrots, or celery or even eggplant! (recipe coming soon) There are so many different ways to make this recipe delicious but still a healthy option. I hope you all enjoyed.


Who Inspires Me

My mother has always been a healthy lifestyle person and she still is. She's always finding new ways to make our traditional Dominican food healthy. I have to say she's one of my biggest inspirations when it comes to eating healthy and also being a mom myself.
