Butternut Squash Pasta

This recipe is great because you get your flavorful pasta fill, and its perfectly healthy! This recipe is inspired by Caitlin Shoemaker you can find her on Youtube. She's a vegan channel and Preppy Kitchen you can also find him on Youtube, hes a cooking and baking channel.

To make the butternut squash pasta here's what you need:
1 butternut squash
1 whole onion (you can use red or white)
2 garlic cloves
Sprinkle of oregano
A packet of sazon, or whatever mixed seasoning you'd like
Salt to taste
Pepper to taste
Pasta (which ever kind you'd like)
Directions:
Take your pasta, and put it in a pot of boiling water with some salt and oil. Chop up the butternut squash, you can use the entire squash or like I did, I used the neck part of it because the other side had seeds. Chop the onion and garlic. First, put the onions in a pan with medium high heat and some vegetable oil, or you can use canola, or even coconut. Salt the onions. Have the onion soften and glisten, and then add the chopped squash. (The reason you add the squash before you add the garlic is because the garlic cooks too quickly and the squash takes a while to soften and we don't want the garlic to burn.) Cook the squash until it softens up a bit, then add the garlic. Cook all of those together for about 3 minutes, then start adding oregano just a sprinkle not too much. (unless you love oregano, then add as much as you'd like!) Add some pepper to taste and the package of sazon or whatever mixed seasoning you'd like. At this point you can add some more salt however, the mixed seasoning should be salty enough. Butternut squash is very sweet, i suggest tasting it at this point and deciding if it needs it. Let the squash become soft completely cook for 15 minutes. When the pasta is done, drain it leaving a small amount of water in there. Take the cooked squash and put it in a blender and blend it together. I like a thicker sauce but if you'd like it a little thinner you can add a small amount of vegetable broth. Add the sauce onto the pasta and mix until it's all well combined. Finally, toast some breadcrumbs with a tiny amount of oil if you want, and sprinkle that right on top.
I really hope you all enjoyed this recipe as much as I did, it was absolutely delicious. Although this is a vegan recipe you can definitely make it non vegan and adding a small amount of cheese at the top.
